Instructions:

For the couscous-herb salad with chickpea-yogurt sauce, put the couscous in a bowl, pour twice the amount of boiling water over it, cover and let it swell for 10 minutes.

Peel, wash and coarsely grate the carrot. Wash arugula, parsley and mint, shake dry and chop coarsely. Mix herbs with carrot and couscous.

Mix lemon juice, oil, honey, sesame seeds and 1 tsp water seasoning to make dressing. Mix dressing with salad ingredients and season again with salt and pepper.

Drain chickpeas, blend finely with yogurt, sesame seeds and lime juice using a hand blender and season with ½ tsp water seasoning, salt and pepper.

Dry roast the pine nuts in a pan and sprinkle over the couscous-herb salad with chickpea-yogurt sauce.
