Instructions:

Wash the quinoa under warm water and cook according to package directions. Wash and chop the tomatoes, cucumber and peppers.

Wash arugula, shake out well and chop if necessary. Put cooked quinoa in a colander and let cool well.

Mix with the vegetables. Marinate with vinegar, lemon juice and oil.

Season with salt and pepper and serve.
