Cold Cucumber Soup with Strips of Smoked Salmon

Instructions:

Peel the cucumber, cut in half and remove the seeds. Cut a small piece of cucumber into strips and set aside. Thinly slice remaining cucumber.

Chop shallot finely. Sauté in butter.

Add cucumber slices, pour Noilly Prat, season and make fifteen minutes with lid closed. Puree.

Add cream and cucumber strips. Bring soup to a boil and season strongly with juice of one lemon, salt and freshly ground pepper. Chill.

Add dill before serving. Cut the smoked salmon into strips and sprinkle over the soup.
