For the beef with radish-herb sauce, marinate the meat with salt and pepper and sear each side briefly in a little oil. Then bake in the oven at 150 degrees for about 10 minutes.

Meanwhile, mix the mustard with the soup, lemon juice, salt, pepper and a little oil. Cut the spring onions into rings and the radishes into small strips. Mix everything together.

Cut the finished meat into thin slices and arrange on plates. Spread the sprouts on it and pour the leek-radish dressing over it.
