Instructions:

For the cognac soft candy, carefully melt fine crystal sugar in a pan until light brown and remove from heat. Stir in nuts and mix with caramel mixture. Slide onto baking parchment or baking mat and, when cooled, grate very finely in a Moulinette. Knead together fondant and marzipan.

Drain the cognac softeners and cut into small pieces. Mix with ground hazelnut brittle into the fondant-marzipan mixture and fill into the prepared triangular shells. Seal with glaze mixture, allow to set and cover with glaze mixture. Chill, but do not refrigerate.For the Cognac Soft Chocolate Confection, melt chocolate glaze over a water bath or in the microwave over very mild heat. It should only be slightly warm.
