For the coffee cream, mix the egg yolks and sugar.

Put the mixture in a small saucepan, place it in a larger saucepan filled with water and bring the water to a boil.

Now add the coffee to the egg yolk/sugar mixture and beat in a water bath until the cream becomes light in color.

Refine the coffee cream with coffee liqueur and serve immediately in beautiful glasses.
