For the coffee acorn cookies, first mix the flour with Natrun and crumble the butter in it. Knead with the remaining ingredients to form a shortbread dough and place in the refrigerator overnight.

The next day, roll out the dough on a floured work surface and cut out acorn kittens. Bake on a greased baking sheet at 160 °C convection oven for about 15 minutes.

Let cool and brush with melted white chocolate. Allow to dry. On top of the white chocolate, add a coffee glaze and an eye made of white chocolate.
