For coconut biscuits and Christmas trees, first prepare the coconut biscuits: To do this, beat egg whites until stiff, add fine crystal sugar. Add powdered sugar, coconut and juice of one lemon. Cover a baking tray with baking paper, form bushels with a spoon and place them on the baking paper.

Bake in the oven at 80 degrees for 20 to 25 minutes. Then let them cool down and remove them from the baking tray.

For the christmas trees: stir the butter in a baking bowl until soft, gradually add sugar. Stir in flour, rice flour, cinnamon and ginger, mix thoroughly and knead together lightly.

Roll out the dough on a lightly floured surface to about ½ cm thick and cut into Christmas trees about 8 cm in diameter.

Line baking trays with baking paper and place the cut-out cookies on them, spacing them slightly apart. Bake in oven heated to 180° Celsius for 15 min. Let the baked cookies rest briefly on the baking sheets, then let them cool on kitchen racks.

Strain confectioners’ sugar into a container, add juice of one lime and mix to a glaze. Dip the bottoms of the cookies in the glaze and let dry.

Serve coconut biscuits and Christmas trees with Christmas tea or coffee!
