Clean the onions and chop the greens. Heat oil in a shallow saucepan and add the onions one by one, season a little bit with salt and let them brown slightly while turning. Add half a cup of water, vinegar and honey. Bring to a boil and continue cooking at a low temperature until the liquid is almost reduced. Cool.
