Cinnamon Pancakes with Pears

Instructions:

First prepare the filling.

Peel the pears, cut them into wedges and remove the core.

Melt butter in a saucepan, add pears and sauté briefly. Deglaze with a dash of Grand Marnier, add the raisins and sugar everything as needed. Add a good dash of lemon juice and let the pears steam covered, depending on the desired firmness to the bite (but not too long, they should not fall apart!).

Stir cornstarch in very little cold water (about 20 ml) until smooth.

Add and let the pears cook down briefly.

Remove from heat and let stand, covered.

At the same time, whisk flour with eggs, cinnamon (sifted if necessary), a small pinch of salt, milk, mineral water and a dash of melted butter until smooth. Leave to stand for a good quarter of an hour.

Heat a little oil in a pancake pan, pour in a little batter and spread evenly by swirling the pan. Bake until golden brown, turn and lift out again.

Bake remaining batter into pancakes as well.

Wrap the pancakes in aluminum foil and keep warm.

Now place one pancake on top, spread some lukewarm pear filling, sprinkle with some cinnamon, chocolate or nuts and fold twice.

Arrange on warmed plates.

The cinnamon pancakes with pears go very well with whipped cream.
