Instructions:

For the Christmas carp, cut the onions, leeks, carrots and celery into strips or flakes. Season the carp with salt, put it in a pot, sprinkle the vegetables, chopped herbs, grated lemon zest and spices.

Pour vinegar and white wine over it and fill up with water until the fish is covered. Salt and let the carp cook on the stove at moderate heat for about 15 minutes, but do not boil.

Serve the Christmas carp with foamed butter and freshly grated horseradish.
