For the chops with cheese, pound chops, salt, pepper and fry quickly on both sides in hot fat and place in ovenproof dish.

Pour 4 tablespoons of water over the frying residue, bring to the boil briefly and pour over the meat. Mix cheese with crème fraîche, thyme, nutmeg, salt and pepper.

Spread the cheese mixture on the chops and bake in the oven at 250 degrees for about 10 minutes. Arrange the chops with cheese and serve.
