For the chocolate soft cake, soften the chocolate in a bain-marie, then beat with half the sugar, vanilla sugar and butter until fluffy, gradually add the yolks, continue beating.

Mix flour with cocoa. Beat egg whites until stiff, add remaining sugar and beat until stiff. Stir some snow into the butter mixture, then fold in the snow and flour alternately.

Pour the mixture into a buttered and floured pan, press well-drained sour cherries on top and bake in a preheated oven at medium heat for about 45 minutes (test with a needle to see if the cake is already cooked through).

Heat cake glaze, pour into a small parchment paper pastry bag and pipe a “wild” pattern on top. Let cool and cut into slices.
