For the chocolate-banana biscuits, grind the almonds very finely together with the banana chips.

Peel the bananas, cut into slices and immediately mix with lemon juice and mash.

Beat the egg whites with the salt until stiff, add the sugar and continue beating until the sugar no longer crunches in the bowl. The beaten egg whites must be firm and shiny. Now gently beat in mashed bananas and banana chip mixture.

Fill the snow mixture into a piping bag with a large star-shaped nozzle and pipe round biscuits onto a baking tray lined with baking paper. Bake in the preheated oven at 170 °C on the middle shelf for 15-18 minutes. Let the biscuits cool on a wire rack.

Chop the chocolate coating and melt over a hot water bath. Dip the underside of the chocolate-banana biscuits into the chocolate and let them drip off and dry on a cooling rack.
