For the chocolate almond cake, separate the eggs and beat the egg whites with a pinch of salt until stiff. Beat the yolks, butter, sugar and vanilla sugar until very foamy.

Melt the chocolate in a bain-marie, allow to cool briefly and then stir into the butter mixture. Then alternately fold in flour and baking powder, almonds and the beaten egg white.

Finally, stir in the milk. Pour into a greased and floured pan (26 cm) and bake at 160 degrees convection oven for about 50 minutes.

Let the chocolate almond cake cool after baking, remove from the mold and sprinkle with powdered sugar.
