Chicken Knuckle with Braised Paprika in Puff Pastry

Instructions:

Salt and pepper the chicken legs. Roll up the puff pastry and divide into even pieces. Place Dulce Italiano on a baking tray and drizzle with olive oil. Braise in the oven at 220 °C for about 8-10 minutes – let cool briefly. Cut peppers into larger pieces and spread about 2/3 on the puff pastry. Place chicken knuckles on top – brush the edges of the dough with yolk and place on a tray with baking parchment. Cover with rosemary sprigs and bake in the oven at about 190°C for about 40 minutes. Heat the remaining peppers briefly, season with salt and pepper and roll into small rolls.

Arrange chicken legs – garnish with the bell pepper rolls and serve with the pesto.
