For Chicken Hawaii, first draw up the pineapple juice with the syringe. “Inoculate” the chicken breasts with the pineapple juice and leave in the refrigerator for 6 hours.

Cut the cheese and ham into small pieces. Finely puree the pineapple pulp with chili, garlic and ginger and season with salt.

Salt and pepper the chicken breasts and rub them with a little oil. Fry on both sides on the grill or in a grill pan for about 10 minutes, then cut into finger-thick slices and cut these slices in half. Place half of the chicken slices on a work surface.

Spread the ham, cheese and pineapple puree on the prepared chicken slices, place the remaining chicken slices on top and secure with a skewer.
