Try this delicious pasta dish:

Cut breast as thick as possible without skin crosswise into 3 slices each.

Place cut side down on plastic wrap. Coat meat with oil, herb salt and pepper, cover with plastic wrap and pound until tender and flat.

Roughly chop bread, crumble in small portions in hand mixer. Mix with grated cheese. Mix eggs. Turn meat in flour, egg and crumbs to other side, place side by side.

Heat oil until it begins to smoke. Cook cutlets in it until lightly browned on both sides, return to paper. Clean frying pan, put on medium heat. Foam butter in it until it is still. Toast cutlets 1 minute per side. Serving.

Serve with: 1 kg of tomatoes, peel, remove seeds, chop and steam with a little fat, salt and paradeis pulp, parsley and thyme until soft.

Serve with green ribbon noodles and a dry white wine.
