For the chicken breast with roasted avocados and tomatoes, first salt and pepper the chicken breasts and brown them in oil.

Roast with garlic and a sprig of rosemary in the oven at 170°C for about 12 minutes.

Peel and pit the avocados and cut into 8 wedges.

Scald tomatoes briefly in boiling water, peel, cut into wedges and remove seeds.

Fry avocados and tomatoes in oil, salt and pepper. Add thyme, olives and garlic.

Cut the chicken breasts and arrange on the vegetables. Garnish the chicken breasts with basil leaves.
