For the chestnut mousse, beat yolks with 3⁄4 of the sugar over steam until foamy. Dissolve chocolate. Stir chestnut puree with rum until smooth.

Add chocolate and chestnut puree to egg yolk mixture and mix gently. Soak the gelatine, dissolve and fold into the chocolate mixture. Whip the egg whites and beat with the remaining sugar until stiff.

Fold into the chocolate mixture. Finally, carefully fold in the not too stiffly whipped cream and pour into prepared ramekins or bowls.
