For the cheesecake with apricots, line a springform pan (26 cm diameter) with the melted butter. Roll out the shortcrust pastry thinly and place in the mold, leaving a 2 cm high edge. Sprinkle cake base with breadcrumbs.

Separate the eggs. Using a hand mixer, beat egg yolks with natural vanilla sugar and powdered sugar until foamy. Stir in yogurt, curd cheese and lemon zest. Sieve the cornstarch and stir into the mixture. Beat the egg whites with a pinch of salt until stiff and fold into the curd mixture.

Spread half of the curd mixture in the mold. Place apricot wedges on top and spread the remaining curd mixture on top. Bake the cake in the preheated oven for 45 to 50 minutes and let the cheesecake with apricots cool on a cooling rack.
