For the cheese shortbread wedges, quickly knead a shortbread dough from flour, butter, egg, salt and pepper and chill for about 1 hour.
Cut the cheese wedges into slices. Roll out the shortcrust pastry on a greased baking sheet to a 25 x 25 cm pastry sheet and cover with the cheese slices.
Place fine strips of paprika in the spaces between and brush everything with yolk. Bake in the preheated oven at 230 °C for about 20 minutes.
