For the granola muffins, first mix the soy milk with flakes, chia, flaxseed, dried fruit and nuts, cover and let soak for 1 hour. Prepare 12 muffin tins.

Preheat the oven to 180 °C top and bottom heat. Cut apple into small cubes. Mash banana with a fork. Wash lemon, grate peel and squeeze juice. Mix flour with salt and baking soda.

Add oil, maple syrup, lemon zest and juice, apple and banana to soaked ingredients and mix well. Quickly incorporate flour mixture with a whisk or mixer.

Pour batter into muffin tins and bake for 30-35 minutes until golden brown.
