Stir a vinaigrette from vinegar or possibly sugar, salt, juice of one lemon, pepper, sour cream or crème fraiche and oil. Peel celery bulb, finely grate with shredder, coarsely grate unpeeled, quartered apple, stir both on the spot with the vinaigrette. Cut grapes in half, remove seeds and mix with the leaf salad. Sprinkle parsley and chopped hazelnut seeds over the leaf salad.
