Peel the celery tubers and grate on the coarse side of the raw vegetable grater. Add the milk and eggs and stir in the flour and nuts.

Mix everything well and season with salt, pepper and nutmeg. Heat a little oil in a non-stick frying pan, pour a little of the celery mixture into the pan with a ladle, swirl to spread it evenly on the bottom of the pan and bake until golden brown on both sides.

Prepare the remaining batter in the same way to make pancakes. Place the finished pancakes on the baking sheet lined with parchment paper.

Preheat the oven grill. Cut the tomatoes into slices, arrange them in a ring on the pancakes and sprinkle with cheese. Place under the grill and gratinate.

Tip: The pancakes can also be cooked with other vegetables, e.g. zucchini or cauliflower.
