For the Cycladic cauliflower, wash the cauliflower in cold vinegar water. Cut away the hard stalk, leaving the small, fine leaves on, and place the whole cauliflower in plenty of boiling salted water.

Drain the barely tender cooked cauliflower upside down, turn it over and place it on a platter.

Serve the cauliflower from the Cyclades with a few lemon halves, olive oil, salt and pepper.
