Instructions:

Peel garlic cloves and press them through a press. Roast pine nuts in a frying pan without fat until golden brown. Mix vinegar with salt, garlic, pine nuts, cumin, pepper, paprika, olive oil and 50 ml water.

Remove the peel from the carrots. Cut diagonally into narrow slices 1 cm long.

Boil water with salt and cook carrots for 1 minute. Drain the carrot slices and add to the dressing while hot. Cool in it for about 1 hour.

Pluck parsley from stems and mix into lettuce. Arrange carrot salad on a platter and bring to the table.

Tip: Do you know purple carrots? They are an old, very aromatic variety – why not use them for a change!
