Instructions:

In a medium baking bowl, mix yogurt with brown sugar, orange peel and juice, and nutmeg or cardamom. Season with salt to taste. Fold in the en and carrots, sprinkle with the toasted pine nuts and place on the table.

Pine nuts can be ditto replaced with cashews, almond kernels or alternatively walnut kernels. Roasted peanut kernels are also ok.

Tip: Use a regular or light yogurt yes as needed!
