For the carrot salad, first mix the balsamic vinegar with mustard and Tabasco sauce for the dressing. Add lukewarm vegetable stock and slowly drizzle in the olive oil while stirring constantly (preferably with a hand blender). (The dressing should be nice and creamy.) Season to taste with salt and pepper.

Finely grate peeled carrots, salt and let sit for a short time. Squeeze and mix with prepared dressing. Drizzle lettuce hearts with a little dressing and arrange in salad bowls together with carrots.

Garnish the carrot salad with roasted pumpkin seeds, cress and sprouts.
