Instructions:

For the carrot confection, finely grate carrots. Slowly boil down with milk for 15-20 minutes, stir in granulated sugar and boil down as well. Simmer butter over not too high heat until clear and lightly browned (tastes better), strain, removing any rather brown egg whites. Let cool, then stir into carrot-sugar mixture and boil down until thick. Place mixture in a cold water bath and cool, stirring constantly, until no longer greasy or glossy (stir in or assemble a little cold butter if necessary).

Spread on a baking sheet (or countertop) until smooth, about 1 inch thick. Let stand overnight in the refrigerator. Cut into cubes or shape into balls. Roll in chopped pumpkin seeds or coconut flakes as desired.
