The slices of meat are heartily pounded, salted, peppered and stuffed.

Stuffing: the cooked potatoes are cooled and cut into cubes. The butter is mixed with the egg yolk. The cheese and the hard-boiled egg are also cut into cubes and the ham is cut into strips. Add 0.1 liters of sour cream, then the beaten egg white and mix well. Fry the smoked bacon, add oil and fry the rolled roulades in this hot fat. Remove the meat from the fat and put it aside. Fry the chopped onion in the fat, add 0.1 liters of beef broth, put the meat back and season with salt, pepper and two juniper berries. Cover and stew until soft. Next, add 0.2 liters of sour cream, grated lemon peel and a mocha spoon of mustard and bring to a boil. The meat is cut and piled on a preheated plate. Pour hot sauce over it and serve.
