For the caramel maroni, melt the butter in a saucepan and pour in the sugar.

Let the sugar melt in the hot butter, stirring again and again. The sugar should turn brown (like caramel).

Add the chestnuts and toss well in the hot liquid.

Pour the sherry over it and simmer the caramel maroni until the liquid is creamy again.
