For the Caprese, cut the mozzarella and tomatoes into slices. Then place one slice of mozzarella and tomato and basil leaves on top of each other directly on the plates, alternating like scales. Season each with pepper and drizzle with olive oil.

Finally, sprinkle the Caprese with freshly ground sea salt and drizzle with a little olive oil.
