Cabbage Casserole – Farcon De Chou

Clean cabbage, quarter, rinse and cut into tender strips except for the stem. Remove the skin from the onions, halve and cut into slices. Crush peeled garlic with a little salt. Cut bacon or cooked ham into strips.

Heat the oil in a pan and sauté the onions. Add the bacon or ham strips and the crushed garlic, sauté briefly, but do not allow to brown.

Stir in the cabbage strips, season with pepper and lightly season with salt. Later cook on low heat for 20 minutes, stirring occasionally. Mix the eggs with the milk. Butter an earthen caquelon (fondue pot) or possibly an ovenproof dish. Layer the cabbage, pour the egg milk over it and sprinkle with breadcrumbs.

Cook in the oven at 160 °C for 1 hour and bring to the table hot on the spot.

Our tip: Use bacon with a fine, smoky note!
