Instructions:

Mix rye flour and wheat flour in a baking bowl and make an indentation.

Crumble in the yeast and mix with sugar, a little water and flour.

Cover and let rise in a warm place for about 20 minutes. Add the remaining lukewarm water, the buttermilk and the salt to the dampfl and work into a smooth dough.

Knead well with your hands for about 15 minutes. Then let the dough rise again for about 20 minutes.

Shape the bread and let it rise again on the baking sheet for about 20 minutes.

Preheat the stove to 250 degrees and after letting the bread rise, bake it on the middle rack for about 10 minutes.

Reduce the temperature to 200 degrees and bake the bread for another 50 minutes. The bread is ready when it no longer sounds dull but somewhat hollow when tapped.
