Instructions:

Crumble the yeast and dissolve in a little milk. Put all ingredients in a large bowl and knead until a homogeneous dough is formed. If a mixer is used, mix on low speed for 2 minutes, then knead on higher speed for 6-8 minutes. Cover the dough with a tea towel and let it rise at room temperature for 1 hour.

Knead again and divide the dough into pieces of about 50 g each. Grind into balls on a smooth work surface (moisten slightly if necessary). Cover again and let rise at room temperature for 30 minutes.

Preheat the oven to 250 °C and place a pot or ovenproof bowl with water on the bottom of the oven.

Flatten the dough balls slightly, score them, sprinkle with cold water and bake for 15 minutes until crisp and golden.

Remove from oven, cool briefly and pack airtight (e.g. in freezer bags or freezer boxes). Let cool completely and freeze.

If necessary, remove the frozen rolls and bake at 200 °C for approx. 30 minutes.
