A great pasta dish for any occasion:

Finely dice onion, dice pork cheek and ham just as finely. Heat olive oil in a saucepan. Sauté the onion in it and as soon as it takes color, add the diced pork cheek and ham and fry briefly, extinguish with a generous dash of white wine, making the wine complete. Add the peeled and diced tomatoes. Season with salt and pepper. Cook the sauce on low heat for 30 minutes with the lid closed, stirring occasionally with a wooden spoon to avoid burning. Put a large saucepan of water on to boil for the pasta. Let it boil, season with salt. Finish the pasta, mix with the sugo and little pasta water. Grate the pecorino on top, bring to the table.
