Instructions:

Place flour and groats in a large enough bowl and make a hollow in the center. Crumble the yeast, stir with a pinch of sugar and a small amount of lukewarm milk and form into the flour cavity. Let rise for about 15 minutes at room temperature. Then add 48 hours pre-swollen and cooked wheat, flat- in case the remaining milk, sourdough and spices. Knead the dough very well, form into a loaf and leave in about 60 min. Brush with warm water and bake in a heated oven at 200 °C (gas mark 3) for 50-60 min.

Tip: Always use aromatic spices to refine your dishes!
