Instructions:

For the bread of the tree first make the sourdough. For this, mix flour, starter and water and leave to rest overnight in a warm place.

For the cooking piece, bring water to a boil, mix in the semolina and let rest overnight.

For the pre-dough, knead flour, yeast and water into a small dough and let rest overnight in the refrigerator.

For the swell piece, mix breadcrumbs with water and let swell for about an hour.

For the main dough, mix sourdough, cooked piece, swelling piece and all remaining ingredients well, preferably with a food processor with dough hook, until a smooth dough is formed.

Then let rest in a warm place for about 3 hours. Then knead again well by hand on a lightly floured board and shape the loaf.

Cover with kitchen foil or baker’s linen and let rest for another 1 hour. Preheat the oven to 260 °C and steam well. Bake the bread on a baking stone or baking sheet covered with baking paper for 75 – 90 minutes (knock bake). Turn the oven temperature down to 220 °C after 5 minutes, and to 200 °C after about 40 minutes.
