For the brandy pears, put 1 liter of water with sugar, vanilla essence, lemon zest and cloves in a large pot, heat and stir until the sugar has dissolved. Then bring everything to a boil and simmer at reduced heat for 15 minutes.

Peel and halve the pears and scrape out the cores with a teaspoon. Then add the pears to the sugar broth and cook until soft, about 15 to 30 minutes. Then remove the pears from the broth.

Prepare compote jars for storage and rinse with hot water. Add 4 tbsp of brandy to each jar. Then fill the glasses halfway with pears and add two more tbsp of brandy on top of each pear. Divide the rest of the pears among the glasses and pour the rest of the brandy over them. Fill the glasses with the brew to within 1 cm of the rim of the glasses. Close the glasses tightly with the brandy pears.
