For the braised leg of lamb with yogurt-mint sauce and rice, first grind all the spices except the bay leaf in a mortar. In a pot, brown the lamb cubes with olive oil, add the onion and garlic, add the spice mixture and bay leaf, and briefly sauté everything together.

Pour in yogurt and water and simmer, covered, over low heat (about 60-90 minutes, adding water in between if necessary). When the meat is soft, season with salt, pepper and mint.

Briefly wash the rice and cook in a pot with the remaining ingredients for about 16-18 minutes on low heat.

Serve the braised leg of lamb with yogurt-mint sauce and rice.
