For the Black Forest Cake, beat the egg whites with the 1/2 sugar until stiff. Cream the yolks with the remaining 1/2 sugar, the butter and the softened chocolate.

Fold the yolk mixture into the egg whites, mix the almonds with the breadcrumbs and flour and also carefully fold into the mixture.

Butter and flour a 26 cm baking pan and pour the mixture into it. Bake at 150 degrees for about 1 hour. Chill and then cut in half.

Whip the cream until stiff and color it with a little food coloring. Spread the bottom cake sheet with half of the jam and spread 1/4 of the stiff whipped cream on top.

Place the middle cake sheet on top and spread with the rest of the jam and again 1/4 of the whipped cream. Place the top cake layer on top and spread the top and sides of the cake with the 3/8 whipped cream.

Decorate the finished Black Forest gateau with the last 1/8 whipped cream, the topping cherries and the chocolate sprinkles.
