Instructions:

For the beet salad with banana dressing, peel the beet and grate finely on a vegetable grater.

Place one lettuce leaf on each salad plate and spread the beet pieces on top. Drizzle with raspberry vinegar.

Coarsely chop the walnuts.

Peel the bananas, cut into pieces and puree with crème fraîche using a hand blender (or food processor). Season to taste with salt and pepper.

Spread the dressing on the salad plates, drizzle walnut oil over it and serve the beet salad with banana dressing sprinkled with walnuts.
