Lard the meat with the garlic. Heat butter fat and bacon cubes and fry the meat briefly in it. Add parsley, onion, carrot and celery and steam. Add tomatoes and roast gently (approx. 6 hours). Add beef broth repeatedly during this process. Before serving, drizzle Aceto balsamic vinegar over the top.

Our tip: Use bacon with a fine, smoky note!
