For the beef rump steak on broccoli puree, first prepare the puree. For the broccoli puree, boil the broccoli in salted water and rinse in cold water – then chop.
Sauté the onion and garlic in oil in a spacious pot, add the broccoli and season with salt and pepper. Pour in soup stock and cremefine, boil gently and puree with a blender – season with nutmeg.
Salt and pepper the steaks and sear them on all sides. Continue to roast with the pan in the preheated oven at 160 °C for approx. 8 minutes, turning several times.
