For the bean soup, first peel and crush the garlic clove. Cut the salsiccia into thin slices. Wash the leek and cut away the green. Cut the white into thin rings. Wash the carrot, peel if necessary and finely dice. Also wash and finely dice the celery. Wash and finely chop the parsley.

In the meantime, heat the oil in a large pot. Fry the salsiccio slices until they are crispy. Drain on paper towels.

Sauté vegetables and garlic in same pot Add flour and stir well. Pour in soup and bring to a boil. Add pasta and beans and cook pasta until al dente.

Add the salsiccia back in. Serve bean soup sprinkled with parsley.
