Instructions:

Blend first 5 ingredients in a hand mixer until smooth. With the hand mixer going all the way through, add a quarter cup of olive oil in a leisurely manner. If the pesto is too dry, add more oil by the tablespoonful. Season generously with salt and freshly ground pepper.

The pesto can be prepared, cover the surface with plastic wrap. Keeps in the refrigerator for 2 days or frozen for up to 1 week. Allow to come to room temperature before using.
