For the basil foam, wash the basil, pluck the leaves and chop them coarsely. Mix into the sauce and strain. This sauce is not very stable in color and tends to turn grayish, especially when heated too much and for too long.

So always prepare it as fresh as possible. Before serving, whip up with a blender or hand blender.
