For the barley soup, first peel and finely dice the carrots and celery. Wash and chop the leek.

Cook barley with carrots and celery in the soup for 45 minutes. After 15 minutes, add the leek.

Finally add the smoked meat. Season barley soup with salt and pepper and sprinkle with chopped parsley.
