Peel the bananas, cut them into large pieces and sprinkle them in a bowl with the juice of a lemon to prevent them from turning brown.

Mix the flour mixed with baking powder, the rice flour, the starch flour and the cinnamon in a bowl with water little by little to make a thin batter.

Heat the oil in a preheated wok until it smokes, then reduce the temperature a little.

Skewer a banana piece on a fork and gently dip it into the batter. Allow to drain briefly. Do the same with the remaining banana pieces.

Sprinkle the light brown sugar on a large plate.

Place the bananas in the hot oil and bake for 2-3 minutes until golden brown. Using a stir-fry turner, lift the bananas out of the oil and roll them in the sugar.

Place the banana slices rolled in sugar in serving bowls and serve with whipped cream or ice cream, if desired.
